Tucked in the quiet hills of Côteaux du Petit Morin, Olivier Collin at Ulysse Collin makes grower Champagnes that feel like a warm hug from the earth. Starting in 2003, he brought his family’s old vineyards back to life with organic care and a gentle touch—no fining, just natural magic in used oak.
His wines are loved by wine pros for their bright, honest character. Today, two favorites, both aged 48 months on lees for extra richness and charm: Les Perrières Blanc de Blancs and Les Maillons Blanc de Noirs.
Ulysse Collin Les Perrières Blanc de Blancs Extra Brut
comes from a cozy 1.3-hectare plot in Congy. Made from old Chardonnay vines, it’s full of green apple, toasted almond, and lemon zest—like a sunny morning in a glass. Creamy yet crisp, with a salty finish, it’s perfect now or until 2035+. Good news: a lighter 36-month version is also available for earlier sipping!
Ulysse Collin Les Maillons Blanc de Noirs Extra Brut
is a bold, juicy Pinot Noir from 1971 vines from a plot in the coteaux du Sézannais. Think plum, cherry, warm spice, and a touch of pastry. Rich but balanced, it’s your new best friend for roast duck or berry desserts, and will shine through 2030+.
With only ~12,000–18,500 bottles each, these 48-month beauties (and the 36-month Perrières) are little treasures.
