I was first introduced to Domaine Guilbert-Gillet by a customer back in 2023. Taking my first glass, I was immediately struck by an intense, lifted floral aroma, so perfumed that I initially mistook the fragrance for a flower at the dining table.


On the palate, the wine delivered a delicate, fine-grained chassis that completely upended my expectations for a traditional red from Savigny-lès-Beaune.


Since that first tasting, demand in secondary markets like Hong Kong has surged dramatically; allocations that once traded between HK$1,000–HK$2,000 have rapidly ascended past HK$6,000–HK$8,000.


It is a textbook example of market demand meeting micro-production scarcity.



Domaine Guilbert-Gillet Overview


Modern Founding (2020): Established in Savigny-lès-Beaune by young vigneron Benjamin Guilbert, his wife Caroline, and investor René Gillet, overcoming high barriers to entry for non-landowning winemakers in Burgundy. They acquire an underground cellar (cuvage) and an initial small parcel of 20 ares in Savigny-lès-Beaune. 


World-Class Pedigree & Mentorship: Benjamin brought extensive experience from stages at elite estates like Château Haut-Brion, Domaine de Montille, and Clos de Lambrays, taking direct stylistic inspiration from his mentor, the legendary Jacky Truchot with delicate, highly transparent, non-forced extraction in style that let fine-grained tannins and ethereal red-fruit aromatics shine.


Since Savigny-lès-Beaune sits in the northern part of the Côte de Beaune, tucked into a cool side valley just northwest of the town of Beaune. Domaine Guilbert-Gillet breaks away from the conventional "easy-drinking Côte de Beaune" template.



Vineyard Portfolio:


  • Total 3.6 Hectares across 12 distinct plots, primarily situated in Savigny-lès-Beaune, alongside minor holdings in Chorey-lès-Beaune. Part of the vineyards were secured primarily through long-term fermage (agricultural lease) agreements. Under fermage, Benjamin and Caroline hold full viticultural and winemaking control over the vines. 


  • The domaine operates on a hybrid structure of owned land and long-term lease contracts (fermage)

  • Red Varieties (Pinot Noir): 3.1 Hectares (~86.1%)

    • Core focus spanning Savigny village sites, old-vine allocations, and 1er Crus.

  • White Varieties (Chardonnay & Aligoté): 0.5 Hectares (~13.9%)

    • Dedicated to micro-allocations of Savigny Blanc and single-parcel Bourgogne Aligoté "Les Grands Champs" (Vieilles Vignes).

This is a cuvee for long-term collection.


For Les Peuillets, it is the benchmark Premier Cru expression of Savigny elegance, earlier approachability of collector favourite.


For Village Aux Petits Liards, delivers immense concentration, "smart money" allocation pick; Les Planchots du Nord emphasizes energetic, non-heavy extraction style; Aux Fourches usually allocate to top international restaurants.


Basically, wines from Guilbert Gillet are sought-after and very hard-to-fine in retail. Strictly allocation status. You can just buy any of them when you see a bottle!



The Terrior of Domaine Guilbert Gillet


Vineyard Management:


Organic Practices & High Trellising: The 3.6-hectare estate focuses on organic, sustainable viticulture, tailoring farming bespoke across its 12 individual plots with high trellising to encourage natural balance. Keeping a tall canopy shades the grape zone, preserving natural acidity and preventing over-ripeness, allowing the wine to maintain the cool, vertical, linear drive characteristic of Chambolle-Musigny or Vosne-Romanée. 


Traditional Échalas & Horse Plowing: For specific steep plots (0.7 Hectares around 19.4% of total estate), vines are trained on single wooden stakes (pieu in échalas) and farmed strictly by hand and horse-drawn plows (producing the cuvées for Savigny "Échalas", Savigny 1er Cru Les Rouvrettes, and Aligoté).


Winemaking:

  • Triple Fruit Selection & Gentle Extraction: Fruit undergoes three strict sorting stages (one in the vineyard, two on sorting tables) before 100% destemming and long, gentle macerations.


  • Unracked Aging & Gravity Bottling: Wines are aged in oak barrels for at least 18 months without racking to preserve lees contact, followed by gravity bottling aligned with favorable lunar cycles.
